These yeast rolls were baked in the officer mess by an aunt from 1938 thru the 2nd world war at Fort Lewis in Washington State.
List of Ingredients
15 cups flour -- divided use
2 teaspoons shortening -- that's Crisco
2 each eggs -- slightly beaten
1 teaspoon salt
1 each yeast cake
1 cup water
1 teaspoon sugar
1/2 cup granulated sugar
1 cup fresh mashed potatoes
2 cups potato water or add water to get measured -- amount needed
Recipe
Mix 1 tsp sugar with the 1 cup water and the yeast cake. Set aside.
Mix sugar, shortening together and then add eggs and the mashed potatoes.
Beat in the proved yeast. Mix in 7 to 8 cups flour till your mixer lugs down. Add it 1 cup at a time along with the rest of the potato water.
Turn out and knead in enough flour so it is not sticky but still soft. Aprox. 7 more cups for a total of 15 cups.
Put in a clean buttered bowl.Spray a sheet of plastic wrap with Pam and cover and set in a warm place to rise or double in size. Punch down.
Shape in rolls and let rise again. Bake at 400-425F for 10-12 min. Brush with butter and sprinkle lightly with sugar.
