    Recipe Introduction

This recipe from the Royal Baking Powder Company is featured in my copy of “The Royal Guide to Meal Planning” (Standard Brands Inc., New York City, 1929).

    List of Ingredients

    1/2 cup shortening
    11/4 cups sugar
    2 eggs
    21/2 cups flour
    1/4 teaspoon salt
    4 teaspoons Royal Baking Powder
    1 teaspoon nutmeg
    1 teaspoon cinnamon
    1 cup milk

    Icing/Filling:
    3 tablespoons butter
    3 cups confectioner’s sugar
    5 tablespoons cocoa
    1 teaspoon vanilla extract
    5 tablespoons strong coffee

    Recipe

Cream shortening; add sugar a little at a time and well beaten eggs, mixing thoroughly.

Sift flour, salt, baking powder and spices together. Add a little of the dry ingredients to the first mixture; add milk a small amount at a time and remaining dry ingredients.

Bake two-thirds of this batter in two greased and floured layer tins.

To remaining third, add 1 tablespoon cocoa, which has been mixed with 1 tablespoon of cold water. Use this for middle layer.

Bake layers at 375 F for 15-20 minutes. Put the filling and icing between layers and on top and sides of the cake.

Filling/Icing: Cream butter and add sugar and cocoa very slowly, beating until light and fluffy. Add vanilla and coffee a few drops at a time, making soft enough to spread.

    Yield: Makes three 8-inch layers.
