Recipe Introduction
Jack-o-lantern-shaped pasta makes this version of macaroni and cheese even more irresistible than usual for a Halloween party. The recipe is adapted slightly from Halloween Treats, by Donata Maggipinto (a 1998 paperback from Chronicle Books).
List of Ingredients
4 cups medium pasta shells or halloween pasta shapes about 3/4 pound
8 tablespoons butter, divided
6 tablespoons all-purpose flour
3 cups whole milk, heated
2 1/2 cups mild or old grated cheddar cheese
Salt and freshly ground pepper
1 cup fine dried bread crumbs
Recipe
Grease a 2 1/2-quart baking dish.
Cook pasta in large amount of boiling salted water for 8 to 10 minutes or until tender. Drain and place in large bowl.
Meanwhile, in medium saucepan over medium heat, melt 6 tablespoons butter. When foam begins to subside, whisk in flour. Cook for 2 minutes, whisking constantly. Do not let flour brown. Slowly whisk in hot milk and cook, whisking until sauce thickens and boils, about 5 minutes. Add cheese; cook for 1 minute or until cheese melts, stirring constantly. Season with salt and pepper to taste.
Pour cheese sauce over pasta and stir gently to mix. Transfer to prepared baking dish. Cut the remaining 2 tablespoons (30 mL) butter into bits and use half to dot surface. Sprinkle with bread crumbs and dot with remaining butter.
Bake at 350 F for about 30 to 35 minutes or until top is golden brown and sauce is bubbly.
Makes 6 servings.
