List of Ingredients
6 Cups water
6 Cups cauliflower flowerets; 1 lg head
1 Can sliced mushrooms; 4oz drained
1/4 Cup green pepper; chopped
1/4 Cup butter or margarine
1/3 Cup All Purpose Flour
1/4 Teaspoon salt
2 Cups milk
1 Cup Swiss cheese; 4oz shredded
2 Tablespoons pimiento; diced
Recipe
In a large saucepan, bring water to boiling. Add cauliflower and cook for 4 to 6 minutes or till crisp-tender. Drain and set aside the vegetable. In another saucepan, cook mushrooms and green pepper in butter or margarine till pepper is tender. Stir in flour and salt. Add the milk all at once.
Cook and stir till bubbly. Remove from heat. Stir in Swiss cheese and pimiento till cheese is melted. In a 1 1/2-quart casserole, place half of the cauliflower. Cover with half of the sauce. Top with remaining cauliflower and sauce.
Bake, uncovered, in a 325º oven for 15 minutes.
Makes 8 servings.
