Recipe Introduction
The swamp thing needs to be heated just before serving, in the microwave or in the oven. Choose a platter accordingly.
List of Ingredients
Mashed potatoes (homemade or frozen and thawed)
Cocktail franks or other small sausages
5 or 6 mushrooms
1 hard-boiled egg
3 green olive
1 slice white bread
Shoestring potato sticks
Pretzel sticks
¼ cup peas Recipe
Use about one-third of the mashed potatoes to create base for face. Peel eggs and cut in half. Carefully remove yolk halves and place them upside down on the whites. Cut one olive in half to use as pupils.
Cut a continuous strip of crust from the toast for the unibrow. Use one mushroom half for each ear. Carefully separate the button mushroom stems from the caps. Use one stem for the nose. Cut a second strip of bread crust for the bottom lip. Cut one cocktail frank in half lengthwise for the top lips. Cut two olives in half for nose and position as in photo. Make tiny balls of bread to position as teeth.
With the rest of the potatoes, form a base for the hair and beard. Place four mushroom caps down as arms and legs. Build up the hair with the potato sticks. Pretzel sticks can be broken in half for the stomach, as shown, or interspersed with potato sticks. Cut more franks lengthwise to use as fingers and toes around the mushroom arms and legs. Drain some peas and scatter them around among the quills.
To warm up for serving, preheat the oven to 350 and heat for 10 to 15 minutes, or microwave briefly.
