5 egg yolks
5 egg whites
1 1/4 cups sugar
3/4 cup bourbon
3/4 cup cognac
3/4 cup dark rum
1 quart milk
1/4 teaspoon salt
1 pint heavy cream (2 cups)
nutmeg
vanilla extract
Recipe
Combine yolks and sugar in a bowl and beat to the ribbon stage. Add bourbon, rum, cognac to yolk mixture, set aside. Whip egg whites and salt to stiff peks. Whip cream to medium peaks. Fold whipped whites and cream together.
Combine white/cream mixture with yolk/liquor mixture, mixing well. Add nutmeg and vanilla to taste. Adjust thickness with milk to desired consistency.
Store very cold, blend well before serving.
