    Chef Gaetano Di Benedetto's Brie with Mushroom Ragout.

    List of Ingredients




    1 mini wheel Brie Cheese

    4 ounces mixed mushrooms

    1 cup chicken stock

    2 Tablespoons olive oil

    1 Tablespoon sliced garlic

    1 teaspoon chopped parsley

    1 Tablespoon flour

    1/4 cup marsala wine

    2 Tablespoons demi glace (if desired)

    Recipe



    1) With the rind on, grill or pan-sear the cheese and put in a pre-heated 400 degree oven

    2) In a hot saute pan, heat the olive oil and add the sliced garlic

    3) After the garlic takes a toasty brown color, add the chopped parsley

    4) Quickly add the mixed mushrooms and saute until tender

    5) At this point add the flour and stir into the mushrooms

    6) Saute very briefly

    7) Deglaze the pan with marsala and reduce by 3/4

    8) Add the chicken stock and reduce to sauce consistency

    9) If a richer sauce is desired, add the demi-glace

    10) Remove the brie from the oven and top with the mushroom ragout
