Black Pasta with shrimp
List of Ingredients
1½ Pounds of black pasta (wide noodles if possible)
24 Large shrimp shelled and devained. (keep the shells)
7 Large or 10 small cloves of garlic
2 Tablespoons of olive oil
11/4 cup of fresh tomatoes (cubed, peeled, juiced and seeded)
Cognac
White Wine
1 Tablespoon of butter
Recipe
1. Place the shrimp shells, 2 cloves of garlic and 1 tablespoon of olive oil in a pan.
2. Cook for about three minutes over a medium heat.
3. Add the shrimp and cook for no more than one minute.
4. Add a splash of Cognac and ½ cup of white wine.
5. Cook until reduced by half and disregard the garlic and shells.
6. Take out the shrimp and set aside.
7. Ad ½ cup of water and cook down by half.
8. In a separate pan sauté the remaining garlic (chopped) with the rest of the oil.
9. Add a splash of wine and the tomatoes and simmer.
10. Cook the pasta.
11. Combine all of the ingredients from both pans, the shrimp and butter.
12. Heat until the butter is melted and pour over the black pasta.
13. Serve hot.
