Breast of Chicken with Balsamic Vinegar
Yield: Serves 4
List of Ingredients
4 boneless chicken breast (without skin)
2 cloves of garlic minced
6 small shallots chopped
6 tbsp balsamic vinegar
¾ cup red wine
1 bell pepper seeded and diced
3 tbsp olive oil
3 tbsp unsalted butter
2 cup chicken bouillon
5 fresh sage leaves chopped
8 leaves fresh chopped parsley
flour for dredging
salt and pepper to tasteRecipe
1. Sprinkle the chicken with salt and pepper on both sides, and lightly flour.
2. Heat the oil and butter in a skillet. Sauté the chicken on both sides until lightly brown.
3. Add shallots, garlic, bell pepper and sauté for 2 to 3 minutes.
4. Add wine and vinegar and continue to sauté for about a minute.
5. Add chicken bouillon, and sage. Cook for about 8 to 10 minutes until chicken is done. Remove chicken and place on warm platter.
6. Reduce sauce until slightly thickened. Pour over chicken, sprinkle with parsley and serve.
