    3 lbs. fresh peas, shelled
    4 tbsp. butter
    3 tbsp. olive oil
    1/4 cup chopped shallots
    1/8 lb. prosciutto, thinly sliced and julienned
    5 sage leaves
    1/2 cup fresh mint, chopped
    salt and pepper

    Recipe



    Add peas to lightly salted boiling water for 10 minutes. Drain. In saute pan, add butter, oil, Prosciutto, sage and shallots. When hot, add peas and saute for 2 minutes. Add chopped mint and serve.

    Serves 6.
