List of Ingredients
2 whole chicken breasts, skinned, boned, and halved
1 large leek, diced (white part only)
3 cloves of garlic, crushed
1/4 teaspoon crushed red pepper
1/2 cup Italian herb seasoning
1 cup fresh or dried mushrooms
2 tablespoons olive oil
1/2 cup dried tomatoes, coarsely chopped
1 cup fresh Italian parsley, chopped
1 cup dry Italian white wine
Recipe
Slice the chicken breasts in halves; then crosswise on the diagonal, into 6 equal pieces. In a large skillet, sauté the leek, garlic, hot pepper, Italian herb seasoning and mushrooms in the olive oil for a few minutes. Add the chicken, dried tomatoes, and parsley; cook for 4 to 5 minutes (slightly undercook the chicken to keep it tender and moist). Add the wine and cover; cook for 3 to 4 minutes. Serve chicken immediately. Serves 4.
