Polpette and Orzo en Brodo

1 Tbs. Olive oil
1 large onion, chopped
1 clove garlic, crushed
1/2 cup dry white wine
2 Tbs. lemon juice
6-8 cups chicken broth
1 lb. ground beef, chicken or turkey
1 tsp. dried italian herbs (rosemary, basil, oregano, whatever)
salt and pepper
1/2 box uncooked orzo
Recipe
Saute the onion and garlic in the oil. Add wine and lemon juice and let cook down a bit. Add broth and bring to a boil. In a large bowl, mix meat, herbs, salt and pepper to make meatball mixture. (You can also add a bit of breadcrumbs, or a beaten egg to the mixture if you like). Form small meatballs (quarter size) and drop into boiling soup. When all the meat balls have gone in, add orzo. Let boil for 10 minutes or until orzo is done.
Serve with parmesan cheese and FRANKS hot sauce!
