Sicilian-Style Meat Roll

# 1 egg, light1y beaten
# 1 garlic clove, peeled and minced
# 1/4 cup Italian-style seasoned bread crumbs
# 1/4 cup tomato sauce
# 1 tablespoon minced parsley or Italian parsley (no stems)
# 1/4 to ½ teaspoon dried Italian herbs or seasoning
# 1 pound lean ground beef (see note)
# Salt and freshly ground black pepper to taste
# 4 thin slices prosciuto or fully-cooked smoked ham
# 1 cup thawed frozen chopped spinach, well drained and patted dry (optional)
# 3/4 cup shredded mozzarella or reduced-fat mozzarella cheese
# 1½ slices mozzarella cheese or reduced-fat mozzarella cheese, each slice cut in half diagonally

In a medium bowl, combine egg, bread crumbs, tomato sauce, parsley, and Italian herbs or seasoning. Add beef, mixing well. Season with salt and pepper to taste. On a sheet of aluminum foil or wax paper, pat meat into a rectangle about 6 x 5 inches. Evenly arrange prosciuto slices over ground beef; evenly sprinkle spinach, if used, then shredded cheese over meat, leaving a small margin around edge of meat.
Starting at the short end of the meat rectangle, carefully roll meat, jelly roll-style, using a fork to lift in the rolling motion. Place meat roll, seam-side down, in 9 x 9 x 2-inch baking pan lightly coated with non-caloric vegetable cooking spray. Bake in a preheated moderate oven (350 degrees F) for 40 to 45 minutes or until done. (Center of meat roll will be pink in color because of prosciuto.) Evenly arrange cheese slices atop meat roll. Continue to bake about an additional 5 minutes or until cheese slices have melted. Allow meat roll to cool for a few minutes before cutting crosswise into slices. Garnish each serving with a sprig of oregano.
Note: May omit ground beef; use 1 pound uncooked ground chicken or turkey.
Note: May prepare a large meat roll for 8 to 10 servings, if desired. Double the ingredient amounts, form meat mixture into a 12 x 10-inch rectangle, place in a 13 x 9 x2-inch baking pan, and bake for about 1 hour.
Serves 4-6.
