3 each 2oz portions sliced & pounded raw turkey breast
1 oz capers
.5 oz chopped parsley
Chicken stock
Lemon juice
Butter
Flour
Salt & PepperRecipe
1. Bring chicken stock to a boil, using equal parts flour and butter. Make a roux, add to boiling stock, strain and remove any lumps.
2. Lightly dust turkey with flour, place a bit more butter in sauce pan, lay turkey in pan, turn when golden brown to other side.
3. Cook until done, add thickened stock, capers, parsley, lemon juice and salt and pepper.
4. Reduce sauce. Serve.
