Lemon and lime marmalade

500g/ 1 1/2 lbs lemons
500g 1 1/2 lbs limes
2 kg /6lbs sugar
2 1/2l (6 pints) water Recipe
Yield:
7 - 9 jars
Wash fruit, remove peel thinly and cut off the pith, reserving some of it. Cut the peel into fine strips, then cut up the fruit, putting the pips and pith into a muslin bag. Put the fruit and water into the preserving pan with the peel and the muslin bag. Simmer slowly for 1 1/2 - 2 hours until the peel has softened and the contents of the pan are reduced by half. Squeeze and remove the bag. Stir in the warm sugar and when it has dissolved, boil fast to a set. Skim, cool and pot as usual.
