# 2 Pkgs Fleischmann’s active dry yeast
# ¾ cup warm water (105-115 degrees)
# 2 cups luke warm water
# 3 Tbsp sugar
# 3 Tbsp shortening
# 1 Tbsp salt
# 2 Eggs
# 2 Tbsp dried basil, crushed
# 2 Cloves garlic, minced
# ½ Tsp dried oregano
# ¼ Tsp thyme
# ¼ Cup grated parmesan cheese
# 7-8 Cups all purpose flour
# 4 raisins
# 2 maraschino cherriesRecipe
Royal icing- powdered sugar, 1 egg white Dissolve yeast in warm water in large bowl. Stir in milk, sugar, shortening, salt, 1 egg, basil garlic, oregano, thyme, parmesan cheese and 4 cups of flour. Beat until smooth. Mix enough remaining flour to make dough easy to handle. Turn dough onto lightly floured surface: knead until smooth and elastic—about 10 minutes. Place in greased bowl; turn greased side up. Cover, let rise in warm place until double, about 1 hour. Punch down dough, divide into halves. Shape each piece into a roll about 10 inches long, slightly tapering one end to form a head. Taper other end to make tail. Flatten middle slightly with palm. Place alligator on lightly greased baking sheet. To make mouth, use scissors to make cut at head end of each alligator, parallel to surface. Mouth can be held open while baking by taping small cardboard triangle; grease insert into mouth. Make cuts on each side of alligator, 1 inch into body facing toward head just behind head and just in front of tail about 2 inches long. Pull away from body slightly. To make claws, snip 3 inch cuts at the end of each leg. For eyes, make 2 cuts in head and place raisin in each cut. To make scales, snip with scissors little v-shapes down backs and tail. Curl tail slightly. Heat oven to 350-degrees. Beat remaining egg with 2 Tbsp water. Brush loaves with egg wash. Bake 25-30 minutes, until bread sounds hollow when tapped. Remove from oven to wire racks and cool. Remove cardboard from mouth. Place 1 maraschino cherry in throat of each gator. Mix powdered sugar and egg white. Pipe teeth. Yield: 2 alligators
