1 C Green pepper slices
1 T Olive oil
1 C Onion slices
2 lbs Chicken tenders
Salt and pepper to taste
1 C Diced smoked ham
1 Cup Pitted marinated mixed olives
1 Can (14.5 ounces) diced tomatoes with roasted garlic

Cut the pepper slices in half.
In a large deep heavy skillet, heat the olive oil over medium-high heat. Add the green pepper and onion slices. Reduce the heat to medium, cover, and cook, stirring occasionally, for 3 minutes, until the vegetables soften slightly.
Meanwhile, cut the chicken tenders into 1 1/2-inch chunks and season lightly with salt and pepper. Dice the smoked ham.
Add the olives, chicken, ham, tomatoes, and water to the skillet. Cover and bring to a boil. Reduce the heat and simmer, covered, stirring occasionally, for 8 to 10 minutes, until the chicken is cooked through.
