JERK CHICKEN MARINADE
1/2 lg onion -- chopped
1/2 lg green onion -- chopped
1/2 chili -- coarsely chopped
1 garlic clove -- chopped
1 tsp Ground black pepper
1/3 tsp ground nutmeg
1 tsp thyme -- crumbled
1/2 tsp salt
2 2/3 tbsp soy sauce
1 tsp vegetable oil
2 chicken breast halves -- boneless skinless
OMELET MIX
8 lg eggs
1 cup waterRecipe
Prepare marinade and refrigerate chicken breasts in it overnight..
Grill chicken and chop into bite-sized pieces. Refrigerate.
To order, heat chicken thoroughly.
Use 1 - 4 ounce ladle of omelet mix to prepare omelet. Fill with warmed jerk chicken.
Garnish with green onions
