New Delhi Turkey Meatloaf

2 T extra virgin olive oil
1/2 C chopped yellow onion
1 clove garlic, minced
1 tsp curry powder
1/2 tsp ground ginger
1/2 tsp coarse salt
1/2 tsp freshly ground pepper
1/2 tsp ground coriander
1/4 tsp ground cumin
1/4 tsp ground cinnamon
1/4 tsp cayenne pepper
1 1/4 lbs (approximately) ground turkey
1 egg, lightly beaten
1 tsp Dijon mustard
3/4 - 1 C chopped walnutsRecipe
Preheat oven to 325 degrees. Lightly coat a 9 x 5-inch loaf pan with a nonstick vegetable spray. Set aside.
Heat a medium nonstick skillet over medium heat for 2 minutes. Add the olive oil and swirl the pan to coat the bottom evenly. Add the onion, garlic, curry, ginger, salt, pepper, coriander, cumin, cinnamon, and cayenne and saute for 5 minutes, stirring occasionally. Remove the skillet from the heat. Cool at least 10 minutes.
Using your hands or a spoon, combine the turkey, onion mixture, egg, mustard, and walnuts in a large bowl and blend well. Place the turkey mixture in the prepared pan and press down on the top to make it evenly flat. Bake for 80 to 90 minutes. Remove the turkey meatloaf from the oven and carefully drain off as much fat as possible.
