    3lbs boneless skinless chicken breast
    1tsp garam masala
    1tsp tandoori paste or powder
    1tsp curry powder
    1 tsp korma mix
    1 tsp cayenne
    1 1/2 cups of whipping cream
    2tbsp butter
    fresh cilantro
    1 small piece fresh ginger root
    1 small clove garlic
    1/8 cup slivered almonds
    olive oil for frying

    This recipe is very time consuming, but well worth the effort if you are a fan of the infamous "butter chicken" Cut chicken breast in cubes and coat with tandoori powder or paste. Fry chicken until cooked and remove from pan and set aside. with a mortar and pestle grind the garlic, ginger and almonds into afine paste. This may require a bit of water being added. And yes, it will take a long time, but if you want this yummy dish you'd better get grinding! Heat olive oil in pan and fry dry spices and garlic ginger almond paste until slightly brown. Gradually add whipping cream stirring well and mixing spices in. Simmer on low for 10 minutes. Add butter and stir gently. Add chicken back to sauce and simmer for 20 minutes. Garnish with freshly chopped coriander. Do not omit this step because the coriander adds a wonderful fresh flavour. Makes approx 4-6 servings and is very rich so you don't need much. Instead of rice, eat with cauliflower that has been boiled and lightly fried in cumin seeds.
