Carrot Orange Soya Glaze

A quick and easy sauce for fish, appetizers, or chicken.
List of Ingredients
2 lb. carrots
2 lb. oranges
5 ozs ginger
2 ozs soya
Recipe
Juice carrots and oranges. Then reduce in separate sauce pan to about 1/4 of their volume. Reduce the orange juice with the ginger peeled and chopped in large pieces. Remove the ginger from the orange when it has acquired as much flavor as you want without being over-powering. Reduce the carrot juice with some carrot pulp for thickness. Then blend the reductions at high speed until comdined then add the soya for saltiness and a bit of color.
*Tip Sauces are about flavor and viscosity, think of it as condiment. If seems to strong remember that you will be having it with food. Also if you needs a bit of sweetness, add some honey or if it seems a bit flat add some lemon juice. If it needs heat go ahead. Remember it’s your show so go crazy and make yours.
