    .38 Caliber Meatballs

    From Ernest A. Williams, Chief of Police in Trenton, New Jersey ("The Cop Cookbook")

    List of Ingredients




    3/4 lb. ground beef

    1/4 lb. ground pork

    1 cup Italian bread crumbs

    1/2 cup grated Parmesan or Romano cheese

    1 Tbsp minced parsley

    3 cloves garlic, finely chopped (reserve about 1 clove's worth)

    1/2 cup milk

    2 eggs, beaten

    1-1/2 tsp salt

    1/8 tsp freshly ground black pepper

    vegetable oil seasoned with the reserved garlic and some minced onion

    your favorite meatball sauce

    Recipe



    Combine the first 10 ingredients and form into 1-inch meatballs. Pan fry in the oil mixture until brown.


    Place the meatballs in your favorite sauce and simmer for about 1 hour.

    Yield: About 3 dozen.
