    MEAT LOAF
    3 lb. lean ground beef
    1/2 cup plain bread crumbs
    2 teaspoons dried parsley flakes
    2 teaspoons instant minced onion
    1 teaspoon seasoned salt
    1/2 teaspoon garlic powder
    1/4 teaspoon pepper
    1/2 cup ketchup
    4 eggs
    POTATOES
    1 1/2 cups water
    2 tablespoons margarine or butter
    1/2 teaspoon seasoned salt
    2 1/2 cups Hungry Jack® Mashed Potato Flakes
    1 1/4 cups milk
    1/3 cup sour cream

    Recipe



    1. Heat oven to 350°F. Spray two 8-inch round cake pans or 8 1/4-inch round glass baking dishes with nonstick cooking spray. In large bowl, combine all meat loaf ingredients; mix well. Press half of mixture evenly into each pan. Bake at 350°F. for 1 hour or until thoroughly cooked in center and meat thermometer registers 160°F.

    2. Meanwhile, in medium saucepan, combine water, margarine and 1/2 teaspoon seasoned salt. Bring to a boil. Remove from heat. Stir in potato flakes, milk and sour cream; mix well. Cover; let stand 5 minutes.

    3. With large pancake turner, carefully remove 1 meat loaf from pan; place on ovenproof plate or foil-lined cookie sheet. Spread about 1/4 to 1/2 cup potatoes over loaf. Remove second meat loaf from pan; place over potatoes. Spread remaining potatoes over sides and top to resemble cake.

    4. Return meat loaf to oven; bake an additional 10 minutes or until thoroughly heated. If desired, top with flowers cut from bell peppers, cherry tomatoes and a message written with ketchup. To serve, cut into wedges.



    Yield:
