List of Ingredients
# 1 4-pound boneless leg of lamb
# olive oil
# 4 4-inch wooden skewers
# 8 cloves of garlic
# 2 tablespoons of mint leaves
Glaze
# 1 cup Bacardi® Mixers Strawberry Daiquiri
# 2 oz Bacardi® Rum
# 1/4 cup Dijon mustard
# 2 tablespoons minced mintRecipe
1. Remove and discard the net surrounding the leg of lamb. Rinse the lamb with cold water and pat dry with paper towels.
2. Open up the boneless lamb and evenly place the garlic and mint in the creases. Pull the lamb back to its original shape and insert the wooden skewers completely into the meat to hold the leg of lamb in place. Remember to remove the skewers before serving.
3. Rub the outside (fat side) with olive oil. Preheat your barbecue grill to medium and place on the leg of lamb with the fat-side on top. Cook for approximately 45 minutes. Use a meat thermometer to reach your preferred level of doneness.
4. While the lamb is cooking, in a bowl, mix together all the glaze ingredients and hold until needed.
5. When the meat just about reaches 160-degrees, brush on the glaze. This should be repeated throughout the rest of the cooking process.
6. When cooked to your taste, remove from the grill and let rest for 10 minutes. Carefully remove the skewers and slice the lamb into thin slices.
