List of Ingredients
2 tablespoons vegetable oil
1 ½ lbs. lean pork, cut into cubes
½green pepper, chopped
½medium onion, chopped
2 tablespoons chopped garlic
1 tablespoon cumin
1 can (10 oz.) tomatoes and green chilies
Salt to taste
1 can (16 oz.) whole kernel corn
1 zucchini squash, sliced
1 yellow summer squash, slicedRecipe
In a large skillet, heat oil and sear pork in it until no longer pink.
Add all other ingredients except corn and squash. Cook slowly over low
heat until meat is tender. Then place corn and squash on top of meat,
cover and steam until squash is tender. Serves 6.
This is a family favorite from a dear aunt in San Antonio. It is
delicious served with warm tortillas and butter.
