1/3 cup freshly grated parmesan cheese

    1 pkg rapid rise yeast
8 cups "better for bread" white flour
    2 tablespoons salt
    olive oil as needed
    BASIC TREASURE CHEST DOUGH

    Recipe

    01. Preheat your oven to 400 degrees.

    02. Add the lukewarm water to a large stainless steel bowl. To this, add the sugar, and the yeast. Mix this with a fork, making sure that all the yeast is incorporated in the water.

    03. Add the flour to the top of the yeast/water mixture. Sprinkle the salt on top of the flour.

    04. Using your clean hand, mix the ingredients in a circular mixture. Then, use both hands to squeeze the ingredients together.

    05. When the flour is incorporated, knead this mixture together for 2 minutes. Shape the dough into a ball.

    06. Remove from the bowl and lightly oil the inside of the bowl. Place the dough back in the bowl and press down.

    07. Cover the bowl with a damp clean towel and place next to the preheating oven for about 20-minutes.

    TREASURE CHEST PREPERATION

    01. Remove the dough from the bowl and place on a cutting board. Cut into 4 equal pieces.

    02. Liberally oil 2 glass baking dishes, each being 13x9x2 inches in size.

    03. Place one piece of dough in each of the two oiled glass baking dishes. Using the hell of your hands, press the dough out to the corners and up the sides.

    04. In a mixing bowl, combine the sautéed potato pieces (first drain the excess oil), the blanched and cooled broccoli pieces, cooked italian sausage chunks, minced garlic, and the grated parmesean cheese.

    05. Divide the mixture from Step #4 over the entire surface of the doughs in the baking dishes.

    06. Roll out the remaining pieces of dough in the size and shape of the glass baking dishes. Place on top of the veggie/sausage mixture.

    07. Pinch around the 4 sides of the dough to enclose the crust.

    08. Place in your preheated oven and bake for approximately 30 minutes, or just until the crust is golden brown. ENJOY!

yields: 2 double-crusted meat and vegetable pies (approx. 13x9x2)
