Cherokee Park Pork Chops

salt and pepper -- to taste
4 large pork chops -- about 1" thick
1 tablespoon vegetable oil -- more as needed
4 large Granny Smith apples -- cored, peeled
-- thinly sliced
1/4 cup cinnamon red hot candies
1 1/2 tablespoons butter
Recipe
Heat oven to 375 degrees.
Salt and pepper pork chops to taste. Heat oil in a large, nonstick skillet. Quickly brown chops on both sides (do not cook through, just make a brown, glazed crust).
Place pork chops in an ovenproof dish. Top with sliced apples. Sprinkle cinnamon candies over the apples. Dot the top with butter. Cover with aluminum foil.
Bake 35 minutes, or until apples are softened to your liking. The longer you cook, the saucier the apples become. But then you risk drying out the pork chops. I found 35 minutes to be a nice compromise between too-hard apples and too-dry pork. Stir to evenly mix in the cinnamon candies before serving.
