    For the spice mix:
    1 1/2 cups chopped onion
    3/4 cup sambal oelek
    1 teaspoon ground cayenne pepper
    1 teaspoon salt
    2 tablespoons cooking oil
    For the burgers:
    12 oz. ground beef
    4 tablespoons spice mix
    4 strips bacon
    2 tablespoons mayonnaise
    2 tablespoons ketchup
    4 hamburger rolls
    3/4 cup finely chopped onion
    1 1/3 cups chopped lettuce or other greens
    8 Italian peperoncini, preserved in vinegar, chopped

    Making the spice mix: 1. Sear chopped onions in cooking oil. 2. Add remaining ingredients and heat, mashing the ingredients together. Let cool. Yields about 1 cup of this multi-purpose paste, which keeps refrigerated for about a week.
    Assembling the burgers: 1. Mix ground beef and spice mix and form into patties. 2. Grill patties to desired doneness, grilling bacon alongside them. 3. While meat is grilling, mix mayonnaise and ketchup to form a “cocktail sauce.” 4. When burgers are almost finished, cut the rolls in half and brown on cut side. 5. Spread half of the cocktail sauce evenly among the four rolls, followed by the burgers, remaining cocktail sauce, bacon, onions, lettuce, peperoncini, and, finally, remaining half of roll.
