Curried Meat Loaf

List of Ingredients
1 1/2 pounds extra-lean ground beef
1 medium onion, chopped (1/2 cup)
3/4 cup quick-cooking or old-fashioned oats
1/2 cup plain fat-free yogurt
2 teaspoons curry powder
1 teaspoon stone-ground mustard
1/2 teaspoon salt
1/4 teaspoon red pepper sauce
2 egg whites
1/4 cup fat-free cholesterol-free egg product
Vegetable Sauce (below)
Recipe
Heat oven to 350°F.
Mix all ingredients except Vegetable Sauce. Spread evenly in ungreased loaf pan, 9x5x3 inches. Bake uncovered about 1 hour 30 minutes or until no longer pink in center.
Serve with Vegetable Sauce.
Vegetable Sauce
1 small cucumber, seeded and chopped (3/4 cup)
1 medium tomato, chopped (3/4 cup)
4 medium green onions, sliced (1/4 cup)
1/4 cup plain fat-free yogurt
1/2 teaspoon curry powder
1 garlic clove, finely chopped
Mix all ingredients.
