DOUBLE-CHEESE MEAT LOAF

2 pounds lean ground beef or 1 pound each lean ground beef and ground veal
1 medium onion, chopped finely
3/4 cup shredded Cheddar cheese
3/4 cup fresh small bread crumbs
1/2 cup milk
1/4 cup grated Parmesan cheese
1 egg, beaten lightly
1 clove garlic, minced very finely
1 teaspoon dried thyme or Italian herb blend
1/2 teaspoon salt
1/4 teaspoon pepper
TOPPING:
1/4 cup bottled chili sauce
1/4 cup shredded Cheddar cheese
Recipe
Heat oven to 350 degrees. In large bowl, combine all meat loaf ingredients, mixing lightly but thoroughly, preferably with mixing fork or large fork.
Lightly fork meat mixture into 9-by-5-inch loaf. (Do not pack solidly or meat loaf will become too compact and firm.) Bake in preheated oven for 60-65 minutes, or until meat loaf is cooked to medium doneness, approximately 160 degrees. Spoon chili sauce over top of meat loaf during last 10 minutes of baking. Remove from oven. Sprinkle with remaining Cheddar cheese and bake until cheese melts, about 1-2 minutes. Let meat loaf stand about 5 minutes before slicing. Sprinkle with additional cheese, if desired.
