Duck sausage w/bok choy

2 TB seasoned oil
2# bok choy, thinly sliced
S&P
2 tsp fennel seed coursely ground
2 tsp ground coriander
1 tsp sesame seeds
1 tsp plum paste
1 tsp minced ginger
1 tsp chile flake
2 cloves fresh garlic
Chiffonade fresh basil
1 ¼ C ground duck meat
1 ¼ C rendered duck fatRecipe
Saute bok choy w/ all seasonings
In very cold processor whip duck fat with a few ice cubes until fluffy
Fold chilled ground duck and chilled cabbage mixture into fat
Fry a teaspoon to check seasoning
Either form into patties and fry or put into casings
