2 four oz. tenderloins of beef
1/2 oz. peppercorns, crushed
1/4 oz. olive oil
salt and pepper
1 small shallot, chopped
French brandy
heavy cream
1/2 oz. butter
1/2 oz. demi glaze Recipe
Heat oil in sauté pan. Salt both sides of beef and coat with crushed peppercorns as soon as pan starts to smoke. Place filets of beef in pan and let cook for 1 minute or until brown. Turn and brown on other side for 1 minute. Remove beef from pan. Add chopped shallots, then add brandy immediately to flame. Add demi glaze after alcohol is burned. Add heavy cream and reduce by half. Add salt to taste. Finish with butter. Return beef back to the pan. Let cook to heat the beef.
