Firefighter's Pork Loin Roast

4 pounds or more boneless pork loin roast
Seasonings:
1/4 cup olive oil
1/2 tsp oregano
1/2 tsp Mrs. Dash
1/2 tsp garlic powder
garlic cloves (optional)
1/2 tsp salt
1/2 tsp thyme
pepper to taste
1 pkg onion soup mix
Recipe
Dry roast and combine oil and seasoning in bowl. Rub seasoned oil on roast. If desired cut slits every 2-3 inches and insert 1 clove garlic under surface in slit. Put in refrigerator for two hours or longer. Cook in uncovered roaster pan at 325 degrees for two hours, or until meat reaches 170 degrees.
