GUINNESS PORK CHOPS IN GRAVY

8 thick-cut pork chops
Salt and pepper, to taste
Flour as needed
1 T. butter
4 T. vegetable oil
4 onions, sliced
3 cloves garlic, peeled and chopped
1 c. Guinness
1 c. chicken stock
1 T. grainy mustard
1 T. parsley, chopped
2 t. balsamic vinegar Recipe
Preheat oven to 350 degrees. Season the pork chops with salt and pepper. Dredge in flour and shake off the excess. Melt the butter and 2 T. oil in a large saute pan and brown the pork on both sides, in batches if necessary. Transfer the pork chops to a plate and set aside.
Dredge the onions in flour. Heat remaining 2 T. oil in a large ovenproof saucepan and add the onions and garlic. Cook for 5 minutes, until onions are softened. Add the Guinness and chicken stock to the pan and bring to a boil.
Add the pork chops to the pan and cover. Place in preheated oven and cook for 30 minutes.
Remove from oven. With a slotted spoon, remove the pork chops and onions from the pan. Arrange on a serving platter and set aside. Return the pan to the heat and add the mustard, balsamic vinegar and chopped parsley. Simmer a few minutes until slightly thickened. Taste for seasoning and add salt and pepper as needed. Pour sauce over pork chops and serve. Makes 8 servings.
