Recipe Introduction
To slice the flank steak in thin strips with ease, place it in the freezer for 15 minutes while you prepare the chard and organize the ingredients for the recipe. Remove the steak and slice it just before you begin to saute the garlic.
List of Ingredients
2 tablespoons of olive oil
8 cloves of garlic, minced
1 1/2 pounds of flank steak, 1-inch slices against the grain
1 1/2 pounds of Swiss or ruby chard, leaves and stems chopped into 2-inch pieces
3 plum tomatoes, seeded and roughly chopped
1/4 teaspoon of nutmeg
Salt and pepper to tasteRecipe
1. Heat a large saute pan on high and add the oil and half the minced garlic. Cook for one minute.
2. Add the beef and stir fry until it is medium rare, about 2 minutes. Season with salt and pepper and remove the beef from the pan, leaving any juices.
3. In the same pan on high heat, add the remaining garlic, tomatoes, and chard. Cover and cook for 3 minutes. Season with salt, pepper, and nutmeg and return the beef to the pan with the chard to heat through.
4. Serve immediately.
