Stuffed Peppers & Cabbage from Capt. Arlowski-Notre Dame Fire Dept.
List of Ingredients
1 Head Green Cabbage
2 Green Bell Peppers
1 1/2 lb. Ground Beef
1 Cup Instant Rice
1 Medium Onion, Chopped
1 Package Onion Soup Mix-Dry
1/2 tsp. Salt
1/4 tsp. Black Pepper
2 Cans Tomato Soup
1 lb. Baby Carrots
Recipe
Core the cabbage head. Add cabbage to large pan of water and bring to boil to blanch the leaves.
Rinse peppers. Cut the tops off of the peppers and clean out insides.
In large mixing bowl, mix ground beef, instant rice, chopped onion, dry onion soup mix, salt and pepper.
Remove blanched cabbage from pot and cool.
Arrange peppers and cabbage rolls in a roaster pan or large pot.
Pour tomato soup over stuffed peppers and cabbage rolls.
Add carrots to roaster/pot.
Cover and bake at 350 degrees for 1 to 1 1/2 hours or until carrots are tender.
