    2 small medallions Filet Mignon ($ 16.75)
    2 Tbsp. Olive Oil ($ .04)
    1 cup Shiitake Mushrooms ($ .90)
    1 Tbsp. Dijon Mustard ($ .02)
    1 Tbsp. chopped Garlic ($ .05)
    1 Tbsp. chopped Shallots ($ .15)
    2 Tbsp. Pernod ($ .20)
    2 Tbsp. Brandy ($ .25)
    1 tsp. Worcestershire Sauce ($ .07)
    1/3 cup Demi-Glace ($ 1.75)
    1/3 cup Cream ($ .42)

    Recipe



    Heat a heavy bottom sauté pan over medium flame. Lightly coat the beef with olive oil, fresh ground pepper and salt. Place the filets in the hot pan and sear quickly on each side. Immediately add the remaining olive oil and mushrooms to the pan. Next, coat the seared filet with the mustard and move it to the cool side of the pan. Add the shallots and garlic then sauté until they are starting to turn gold in color. Next add the pernod and brandy and allow a flame to ignite in the sauté pan. This process allows the alcohol flavor to cook out of the sauce. The flaming process should be used only in a well-ventilated and clear stove area, and can be skipped if you do not feel comfortable with the process. Pernod is a licorice-flavored liqueur widely used in France and can be found at most liquor stores. Next add Worcestershire sauce, demi-glace and cream. Demi-glace is an intense flavored brown sauce reduction that is used as a base for many sauces and can be found in some specialty markets as a concentrated paste. Beef stock can be substituted in a worse case scenario. Finally, reduce the sauce until it reaches your desired thickness, while basting the filet with the sauce. Serve with your favorite side dishes.
