1 lb. thick sliced bacon, cut into 1 - 1/2" pieces
5 or 6 med. sized potatoes, cooked and cubed
1 lg. onion, finely chopped
1/3 c. canned pimiento
1/3 - 1/2 c. chopped green pepper
Salt and pepper to tasteRecipe
Pan fry bacon. Drain in paper bag or on paper towels; save enough bacon grease to fry onion and green pepper, then add cubed potatoes and pimiento. Salt and pepper to taste, add cooked bacon and keep hot to serve. Serves up to 6.
