Lacerated Pork with Mandarin and Peppers

List of Ingredients
1.5 Kg loin joint or 1Kg of Pork loins/fillet
1 Onion
½ Red,Green or Yellow pepper chopped/sliced
1 Small tin of mandarin
2 tbls Orange marmalade
1 tbls White wine vinegar
1 tbls Tabasco sauce/Chilli powder
1 tbls Cornflour
Marinade
1 Orange (juice and zest)
2 tbls lemon juice
3 Cloves of garlic
1 tbls Tabasco sauce
1 tbls White wine vinegar
Recipe
1. Chop the pork into large pieces.
2. Lacerate the pork in a food processor. Use the blade on full speed and pulse 5-6 times to lacerate but not to chop up the pork.
3. Marinate for 1 hour in marinade ingredients.
4. Fry the meat.
5. Fry the veg then add mandarin juice, orange juice, marmalade and tabasco sauce.
Serves 3-4.
