    Lawry's Corned Beef and Cabbage

    Serves 8-10 people

    List of Ingredients




    # 6 pound Corned-Beef Brisket
    # 1/2 cup Pickling Spice (A mixture of Bay Leaves, Black Pepper Corns, Allspice, Mustard Seeds)
    # 1 Clove of Garlic, peeled
    # 16 each small red potatoes, HALVED
    # 1 Small head of cabbage cut into wedges
    # 1 pound of peeled baby carrots
    # 4 each Parsnips, peeled and quartered
    # 4 Tablespoons of melted whole butter
    # Chopped Parsley
    # To taste, Lawry's Seasoned Salt and Seasoned Pepper Method

    Rinse Corned Beef under cold water and pat dry.

    1) Place the Corned Beef in a large flat pot, add cold water just enough to cover the meat. Add the Pickling Spice and the Garlic and bring to a boil.

    2) Reduce the heat to a simmer and cover pot with the lid. Skim some of the fat from the top as it rises. You may simmer on the stove top or place pot into a 300degree F oven. Cook for approximately three hours or until fork tender.

    3) Remove the Corned Beef from the pot and place on a cutting board, cover the meat with foil and let rest for 20 minutes.

    4) Bring the pot with the cooking liquid back up to a boil and add the red potatoes, cabbage wedges, baby carrots and quartered Parsnips. Reduce heat to a simmer and let cook for 20 minutes or until the vegetables are tender.

    5) With a slotted spoon, plate the cabbage, potatoes and vegetables onto deep entrée plates.

    6) Cover potatoes with melted butter and chopped parsley.

    7) Cut the excess fat off the Corned Beef, slice the meat against the grain and serve over the cabbage on the plate. Ladle some of the cooking liquid over the meat.

    8) Enjoy with Lawry's Seasoned Salt and Seasoned Pepper.

    9) May be served with Whipped Cream Horseradish sauce or a whole grain mustard.

    Lawry's Whipped Cream Horseradish
    Serves 6-8 people

    Ingredients
    # 1 cup whipping Cream
    # 1/4 teaspoon Lawry's Seasoned Salt
    # 2 Tablespoons prepared horseradish, well-drained or 4 tablespoons of finely grated horseradish root
    # Dash of Tabasco Sauce

    Method

    1) Whip cream until stiff peaks form.

    2) Fold in Seasoned Salt, horseradish and Tabasco until well mixed.

    3) Enjoy!
