    MINNESOTA CABBAGE ROLLS

    1 pound ground beef

    1/4 pound ground pork

    2 teaspoons salt

    1/2 teaspoon ground black pepper

    3/4 cup cooked rice

    1 small onion, finely minced

    2 (8-ounce) cans tomato sauce, divided

    12 large cabbage leaves

    Boiling water

    1/4 cup packed dark brown sugar

    1/4 cup lemon juice or vinegar

    Combine beef, pork, salt, pepper, rice, onion and 1 can tomato sauce in large bowl. Set aside.

    Place cabbage leaves in large, heatproof bowl. Cover with boiling water; let stand for 4 minutes. Drain.

    Divide meat mixture into 12 portions. Place 1 portion in the center of each cabbage leaf. Roll up leaves, folding in the sides and enclosing the meat in tidy bundles.

    Place each cabbage roll seam-side down in a large skillet. Mix remaining can tomato sauce with brown sugar and lemon juice. Pour over rolls. Simmer, covered, over low heat until cabbage is tender and filling is cooked through, 1 to 1 1/2 hours, basting often.

    Serves 6.
