List of Ingredients
Gorgonzola Sauce
* 1 tsp. Chopped Garlic
* 1 tsp. Minced Shallots (or substitute with red
onion)
* 3-4 oz. Gorgonzola cheese (or substitute with bleu cheese)
* 1/2 glass Red Wine
* 1/2 Cup of heavy whipping cream
* pinch of black pepper
* very little salt, if any
Flank Steak Marinade
* 1 Cup Olive oil
* 1 cup Red Wine
* Salt and Black Pepper
* 1 Sprig Thyme
* 1 Sprig Rosemary
* 2 Chopped Serrano Chili's
* 2 Tbl Chopped Garlic
* 2 Tbl Chopped Shallots or Red OnionRecipe
Sauté your garlic and shallots in the olive oil. Just as begins to turn golden brown, add your red wine. Bring this to a simmer and add your Gorgonzola cheese. Once the cheese has melted into the wine, add your heavy cream and reduce the liquid until it coats the back of a spoon. A little Parmesan cheese can be used to help thicken the sauce. As always, add salt & pepper to taste.
Marinade:
Simply mix all of the ingredients and allow the meat to marinate for 24 to 36 hours. Then grill to preferred temperature.
Suggested wine: Sangiovese, Martini & Prati, California
