Matchsticks of beef in red wine

100g mushrooms sliced
1 tablespoon vegetable oil
40g butter
1 medium onion peeled and chopped
750g topside of beef cut into matchstick strips
2 tablespoons plain flour
salt
freshly ground black pepper
1/2 teaspoon mixed dried herbs
garlic clove peeled and crushed
1 tablespoon port
150ml beef stock
150ml red wine
Recipe
Fry the mushrooms in the oil and butter for 2 minutes over moderate heat then remove.
Fry the onion for 34 minutes stirring once or twice.
Toss the beef strips in the flour mixed with salt pepper and the dried herbs.
Shake excess flour from the beef and add the meat to the pan.
Fry for 5 minutes stirring frequently.
Stir in the garlic mushrooms port stock and wine and bring the sauce to the boil.
Reduce the heat to low cover the pan and simmer for 25 minutes.
Taste the sauce and adjust the seasoning if necessary.
Serve with potatoes boiled in their skins and a dish of mixed vegetables such as peas and carrots.
