Meal in a PEI Potato

4 baked PEI Russet potatoes 4
2 cups sliced mushrooms 500ml
2 tbsp butter 25ml
1/4 cup finely diced celery 50ml
1/2 cup chopped onion 125ml
1/2 cup coarsely chopped red pepper 125ml
1 garlic clove, minced 1
1 lb sirloin steak, thinly sliced 450g
1/2 cup snow peas or broccoli florets 125ml
2 tbsp apple juice or white wine or beef stock 25ml
1 tsp cornstarch 5ml
2 tbsp waterRecipe
Saute mushrooms, celery, onions, red pepper and garlic in butter in large frying pan, 2-3 minutes. Stir in steak and saute until tender. Add snow peas or broccoli. Stir and cook 2 minutes; add remaining ingredients. Cook and stir until heated. Cut baked potato in quarters, lengthwise. Spoon vegetables and meat over potatoes.
