    2 lb (1 kg) white mushrooms, cleaned and coarsely sliced
    2 tbsp (30 mL) chopped fresh parsley
    1/2 cup (125 mL) chopped shallots
    2 tbsp (30 mL) butter
    Salt and pepper
    Paprika

    Cheese Sauce:

    1/2 cup (125 ml) grated Canadian Gruyère cheese or Canadian Swiss cheese
    1 cup (250 mL) sour cream
    1 egg yolk
    1 egg
    Salt and pepper

    Preheat oven at 375 °F (190 °C)

    In saucepan, sauté mushrooms, parsley and shallots in butter for 2 minutes. Season to taste with salt and pepper. Transfer mushroom mixture to ovenproof dish. Top with cheese sauce and sprinkle with paprika. Bake in oven for 11 minutes. Place casserole under oven broiler and grill for 4 minutes or until hot and bubbly and cheese is golden brown.

    Cheese Sauce:

    In bowl, mix Canadian Gruyère or Canadian Swiss cheese with all ingredients. Season to taste with salt and pepper.


    Serves 4-6.
