5kg mutton or spring lamb or goat
500g sheeps tail fat (if meat is lean, available from turkish/greek butchers)
30-50g sea salt
ground black pepper to your taste
10g ground coriander
10g allspice
150ml white vinegar
400ml worcester sauce
90g casings
Optional:
25g dried mint
ground dried green chillies, to taste
bulb of garlic, minced
Recipe
Cut the meat and fat into 2inch cubes. Mix all seasoning and spices, add to meat. Mince meat mixture coarsely, sprinkle with vinegar and worcester sauce, and mix thoroughly. Put into casings. If using a kenwood sausage maker, put though mincer without a blade when stuffing casings.
