    WITH GRILLED VEGETABLES

    List of Ingredients




    (2 servings):
    2 6-oz.loin chops, lean, raw, with bone 1 cup grilled vegetable mix (see instructions below)
    2 Tbs. tomatoes
    1 Tbs. herb oil 2 tsp. raw parsley

    Ingredients for grilled vegetable
    mix:
    1 cup mixed vegetables of your choice, such as eggplant, zucchini, red onion, bell peppers
    1 tsp. olive oil mixed with 1/2 tsp. chopped garlic
    1 cup roast garlic sauce (see recipe below)
    1/8 tsp. sodium 1/8 tsp. pepper

    Ingredients for roast garlic sauce:
    1/2 cup garlic cloves
    1 tsp. chicken base
    1 Tbs. water
    1 Tbs. sherry
    3 Tbs. olive oil
    1 Tbs. rice vinegar

    Recipe



    1. Prepare the roast garlic sauce by combining garlic and olive oil in r-inch metal pan.
    2. Cover with aluminum foil.
    3. Cook in oven until medium brown.
    4. Stir and check every 15 minutes.
    5. Cool garlic and olive oil overnight in refrigerator.
    6. Combine with remaining ingredients and blend with hand mixer until smooth. 7. Prepare the grilled vegetable mix by brushing vegetables with the oil and garlic mixture.
    8. Grill over high heat to brown on both sides (be sure not to burn).
    9. Cool on sheet pans.
    10. Dice onion and peppers 1/2-inch square. Sauté each in two pans.
    11. Mix cooled ingredients with garlic sauce, vinegar, salt and pepper.
    12. Prepare lamb chops by cooking in sauté pan.
    13. Serve lamb chops with vegetable mix.
