1/4 Cup Apple Jelly
2 Tablespoons Lemon Juice
1/2 Teaspoon Pumpkin Pie Spice
Vegetable Cooking Spray
1 Pound Pork Tenderloin, Trimmed
2 Tart Red Cooking Apples, Unpeeled, Cored, Thinly Sliced Recipe
Heat oven to 375 degress F. In small bowl, combine apple jelly, lemon juice and pumpkin pie spice; blend well. Sray roasting rack with nonstick cooking spray; lave in sallow pan. Place pork tenderloin on prepared rack, brush with half of the apple jelly mixture. Roast at 375 degree F for 20 to 30 minutes or until meat thermometer registers 155 degrees F. Let stand 5 to 10 minutes. Place apple slices on broiler pan; bursh with remaining apple jelly mixture. Broil 5 to 6 inches from heat for about 5 minutes or until apple slices are tender. Slice tenderloin; serve with cooked apple slices.
