3 pork hocks, cut across into 4 pieces 3
1/2 cup all purpose flour 125 mL
2 tbsp olive oil 30 mL
1 large onion, diced 1
4 cloves garlic, minced 4
28 oz beef or chicken stock, (use empty tomato can to measure) 800 mL
1 28 oz (796 mL) can tomatoes, chopped 1
2 tbsp tomato paste 30 mL
1 tbsp fresh thyme (or 1 tsp / 5 mL) 15 ml
1 tsp grated lemon rind 5 mL
1 tbsp minced garlic 15 mL
1 tbsp chopped fresh parsley 15 mL
3 anchovy fillets, minced (optional) 3
Salt and freshly ground black pepper
Recipe
Dredge pork in flour. Heat 1 tbsp olive oil in a skillet, and cook pork until browned on both sides. Heat the other tbsp olive oil in a large, ovenproof casserole, and saute the onions and garlic until onions are soft. Add browned pork, stock, tomatoes, tomato paste, and thyme. Bring to a simmer and place, uncovered, in an oven at 350F for about 1 hour, or until pork is almost dropping off the bone.
Gremolada: Combine lemon zest and garlic, chopped parsley and anchovy fillets, if using. When ready to serve, stir in the gremolada, check seasoning, and add salt and pepper if necessary.
