Pineapple Ham Stir Fry

3 cups pre-cooked instant rice, prepared according to instructions
1 can (14 oz) pineapple chunks, drained, reserve juice
2 Tbsp orange juice
2 Tbsp vinegar
2 Tbsp soy sauce
1 Tbsp cornstarch
1/4 tsp garlic powder
1/4 tsp. crushed chili peppers
1/4 tsp. ground ginger
1 Tbsp oil
2-1/2 cups assorted fresh or frozen vegetables
1 can (6.5 oz) flakes of ham Recipe
For sauce, stir together pineapple juice, orange juice, vinegar, soy
sauce, cornstarch and seasonings. Set aside. Preheat large skillet
over medium-high heat. Add oil. Add vegetables and stir until tender.
Add sauce. Cook and stir until thickened. Add ham. Stir until heated
through. Serve with hot rice. If desired, sprinkle with toasted
sesame seeds or sliced green onion.
